Preparation
- Preheat oven to 350 degrees F
- Grease & flour 18 muffin cups.
- Mix flour, baking soda, salt, cinnamon, ginger and nutmeg in a separate bowl. Stir flour mixture into pumpkin mixture.
- Let set in refrigerator for 1 hour before baking.
- Spoon batter into the prepared muffin cups
- Combine brown sugar, flour, butter and cinnamon in a bowl using two forks until mixture is crumbly.
- Sprinkle streusel over each muffin.
- Bake for 20 to 25 minutes/
