Pumpkin Muffins

Diana's recipe she found.

Ingredients for dough

Ingredients
3/4 C brown sugar
3/4 C white sugar
1/2 C butter (softened)
2 eggs
1 C pumpkin puree
1/3 C buttermilk
1-3/4 C all-purpose flour
1 tsp baking soda

1 tsp

salt
2 tsp cinnamon
1 tsp ginger powder
1 tsp nutmeg

Ingredients Streusel

Ingredients
1/3 C packed brown sugar
1 TBLS all purpose flour
1 TBLS butter
1/4 tsp cinnamon

 

Preparation

  1. Preheat oven to 350 degrees F

  2. Grease & flour 18 muffin cups.

  3. Mix flour, baking soda, salt, cinnamon, ginger and nutmeg in a separate bowl. Stir flour mixture into pumpkin mixture.

  4. Let set in refrigerator for 1 hour before baking.

  5. Spoon batter into the prepared muffin cups

  6. Combine brown sugar, flour, butter and cinnamon in a bowl using two forks until mixture is crumbly.

  7. Sprinkle streusel over each muffin.

  8. Bake for 20 to 25 minutes/
